Part 1 of 5 academic articles that explores the history, culture, and geography of spices and herbs. Provides a master list of 24 common herbs and spices that originated in the Old World (Africa, Asia, or Europe) that were not available in North, Central, South America or the Caribbean region before the Columbus voyages (1492–1504). Herbs and spices were selected based on a literature review of ancient authors dating back to 3,500 years. Note the limitations in geographic regions based on your research topic.

Part 2 of 5 academic articles that explores the history, culture, and geography of spices and herbs. Investigates herbs and spices that originated in the Americas, both Pre-Columbian and after the Spanish arrival. Explores history and uses by the Aztecs (Mexica), Inca, and Native American civilizations as well as the Spanish. Note that observations and records of these ancient civilizations are limited as they were made later in time by the Spanish and others.
